Happy National Salad Month!

May is National Salad Month, officially designated a holiday in 1992 after a national poll revealed that three out of four people ate a tossed salad every other day.

Salads are rooted in history. Long before the ancient Romans ate them, and even before the fork was invented, people ate bits of leafy herbs dressed with salty oils. Today, we eat salads as a first course, laden with vegetables, fruits, nuts, croutons and dressing, and also as an entrée, with fish, meat, pasta or whole grains.

Eating a salad every day is about the healthiest eating habit you can develop, according to health experts. Salads are rich in fiber, which helps control your cholesterol. Salads also help you lose weight, since fiber makes you feel full for a long period of time. Salads are also high in antioxidants, which help protect against free radicals, or harmful molecules.

Adding a dressing made with olive oil increases the health benefits of eating a salad, since olive oil has a number of beneficial properties, including lowering blood pressure and helping with weight loss.

If you’re concerned about weight gain or high cholesterol, don’t add bacon, cheese and other high fat ingredients to your salad. You also will want to use a low-fat dressing such as a light oil and vinegar dressing seasoned with garlic and lemon.
